So I have a thing for cupcakes – they’re cute, they taste awesome, and they are so much fun to decorate. So as soon as I saw the cover for The One Memory of Flora Banks, I knew that I was going to be making cupcakes to go along with the book. They aren’t the most elegant cupcakes in the world (of course), but they were so much fun to decorate.
For this book inspired recipe, I wanted to keep it simple, so I just used a boxed cake mix and canned frosting. I used white cake mix and white frosting – it doesn’t really matter which brand you use, and you can probably even use a different flavor for the cupcakes themselves – I imagine they would be pretty if you decided to make chocolate cupcakes, too! If you’re feeling extra creative, you can always whip up your favorite recipe for both the cupcakes and the frosting.
What You Need to Make The One Memory of Flora Banks inspired cupcakes:
- 1 box of cake mix (your choice in flavor, I used Betty Crocker White Cake Mix)
- Water, oil, and egg whites according to package
- 1 can of frosting (again your choice – I used Pillsbury white frosting)
- 1 can Wilton Color Mist food color spray in blue
- Silver decorator sprinkles (I used Wilton Pearlized Sugar in silver)
- Foil cupcake liners
How to Make The One Memory of Flora Banks inspired cupcakes:
- Preheat oven according to package directions. While oven preheats, line cupcake pans with foil liners
- Prepare cake mix according to package directions, scoop about three tablespoonfuls into each cupcake liner.
- Bake according to package directions (mine took about 18 minutes).
- Let cupcakes cool – I gave mine about 45 minutes to cool completely.
- Using a pastry bag and a piping tip (I used the Wilton 1M Open Star Piping Tip), pipe frosting around the cupcake.
- Use the Wilton Color Mist spray to spray the desired area of frosting with the blue food coloring.
- Sprinkle the top with the silver decorator sugar.
